I need some answers!

My first post, so I say hello to all reading. I'm a 27 yo which had a bad junk diet for a long time but never got fat except a big belly witch is back to normal now, 75-76kg at 183cm. Two weeks ago I joined the gym and I want to change my lifestyle, I'm not only after muscle growth.
Until now I went 5 days out of 7 to the gym, but i feel this may be too much keeping in mind that I do physical effort at work everyday, 40-45 hrs a week. I want to chance starting next week, but I can't decide yet between training 3 times a week with double break sat and sunday or 4 times adding sathurday on when I don't work.
So my first question is: How many times a week you recommend me to work out and how long a break for a specific muscle after exercise(1-2-3 days)?

I try to change my diet, its a good start and works ok until now, I don't want to change my entire eating habit in one week, but 80% of the junk is gone and I try to eat healthy. I don't take "proteins" yet, just a few commercial shakes which contain a higher amount of proteins, I'll start in 5-10 days with the real deal, but even without "proteins", I still find it hard to get up to at least 1800-2000kcal per day, and I know I need 2800-3000kcal just to keep me going. My hope was to get 2000-2500kcal from food and later another 800-1000kcal from supplements. I just find it impossible to eat 6-7 times a day, first thing would be the timing and my work which can be pushed if I'll try hard enough, but the big problem is than I just can't eat that much food, my body won't let me do it.
This is a point where I need some advice,I try to change my lifestyle with the gym, but in the same time I want a good diet which I can eat to make the effort worth and seen on my body also.

I'm open to any advice or ideas, and if you post something decent, I will test and give feedback.
